Banana leaf fish

1. Marinate fish with salt and pepper.

2. Temper banana leaf quickly over flame to sterilise it. Look at how glossy it becomes and pliable.

3. Spread seasoning over fish.

4. Cover banana leaf in half.

5. Wrap with aluminium foil so liquid doesn’t flow out.

6. Heat over flame for 5 mins on each side.

6. Unwrap and eat. Be careful to release steam when you first unwrap as it can hurt.
