1. Boil Macoroni (here I used penne because I’ve run out of macoroni) in water, add salt. Drain. Divide into muffin cups.
2. Melt butter, sprinkle flour, and whisk over heat for 5 mins.
3. Add milk, cayene pepper, thyme, mustard. Whisk.
4, Pour (3) into 1 whisked egg. Add into the macaroni mixture.
5. Sprinkle cheddar cheese, mozarella, parmesan and bread crumbs. Add salt (do not undersalt) and pepper.
6. Top with extra cheese. Bake at 180degrees celsius for 10 mins, or until top melts.
